Beef Pho has been listed among the top 10 best meat-based broth dishes globally, as suggested by the culinary website Taste Atlas. The list, introduced by Taste Atlas, known as the "atlas of world cuisine", is based on votes from 5,232 culinary experts and diners from around the world. The purpose of this list is to promote delicious dishes from various destinations worldwide, sparking the curiosity of diners and pride in traditional dishes among locals.
Beef pho ranks third with a score of 4.6. The website describes this version of pho as having a broth simmered from beef bones, beef brisket, and oxtail, seasoned with spices such as cinnamon, star anise, cloves, cardamom, and coriander. Pho is served hot, with different types of beef such as brisket, flank, tendon, beef balls, and garnished with herbs like onions and cilantro.
There is also a rare-cooked beef pho in the northern style, which ranks fifth. According to Taste Atlas, this version differs from the previous one by combining well-cooked beef with rare-cooked beef. The beef is cooked directly in the bowl with hot broth. The pho broth is simmered from bones, meat, ginger, onions, star anise, cloves, cinnamon, and seasoned with fish sauce and sugar.
In both versions, diners can enjoy pho with bean sprouts, lime, fresh chili, chili vinegar, chili sauce, or black sauce. Adding these condiments is optional, depending on personal taste. However, these accompaniments enhance the aroma of the pho.
The other dishes on the list, ranked from 1 to 10, include tom kha gai (Thailand), rawon (Indonesia), ciorba radauteana (Romania), gulyás (Hungary), rosół (Poland), beef noodles (Taiwan), Húsleves (Hungary), soto betawi (Indonesia).
